The Summer of 2025 is Budding, Three Locations Reopening!

We’re thrilled to share that this summer is coming up rose[bud]s! We’re bringing back three of our most iconic restaurants: The Rosebud on Taylor Street, Rosebud Naperville, and Carmine’s Chicago—and we couldn’t be more excited to welcome you back.

Leading the celebration is the return of The Rosebud on Taylor Street, our original location at 1500 W. Taylor Street. After a brief hiatus, during which the space served exclusively as a private event venue, our flagship restaurant will reopen to the public in Summer 2025. We’re bringing it back to its roots—as the heart of Rosebud and a proud landmark of Chicago’s Little Italy.

To our founder, Alex Dana, this location is more than a restaurant. It’s a reflection of Chicago’s rich culture and community. We’re not just reopening a space—we’re reviving the spirit, the hospitality, and the flavors that have brought people together for decades. We’re bringing back not only the food you love, but the warm, familiar atmosphere that makes you feel like family. This is a celebration of where we’ve been and where we’re going—together.

When we opened The Rosebud in 1976, our mission was simple: to serve delicious, authentic Italian food with heartfelt hospitality. What began as Bocciola della Rose (“bud of the rose”) quickly became a Chicago favorite, known for dishes like chicken parmesan, veal piccata, chicken vesuvio, and our famous baked ziti—once called the best Tom Hanks ever had.

Over the years, The Rosebud on Taylor Street became a gathering place for both locals and legends—Frank Sinatra, Robert De Niro, Oprah Winfrey, and even Prime Minister Tony Blair. Our walls, lined with photographs and stories, reflect decades of unforgettable moments and remarkable guests.

At every Rosebud location, our menu is built around timeless Italian-American classics that continue to bring comfort and joy to generations of guests. With the reopening of Taylor Street, Carmine’s Chicago, and Rosebud Naperville, we’re excited to bring back the signature dishes and warm hospitality that have made us a part of Chicago’s dining fabric.

The Rosebud on Taylor Street offers an atmosphere that blends vintage charm with timeless elegance. Rich dark wood, plush leather booths, and historic black-and-white photographs reflect our roots in Little Italy. Once home to a macaroni factory, the space now includes a welcoming bar and intimate dining room—formerly a family butcher shop—featuring wood panels, vintage lighting, and artwork steeped in Chicago history.

Upstairs, our private event space accommodates 130–150 guests with two distinct rooms. The front features booths for 16, a 14-seat bar, and cozy tables, while the back room offers a more intimate setting for around 105 guests.

While renovations are underway, we invite you to visit our other Rosebud Restaurants throughout the Chicago area, suburbs, and Boca Raton. And when Taylor Street, Naperville, and Carmine’s reopen this summer, we hope you’ll join us to celebrate tradition, community, and the return of a beloved Rosebud experience. With love,

Carmine’s Gold Coast Reopening Update

Here’s the latest about Carmine’s Reopening in the Gold Coast

Carmine’s is preparing to unveil a stunning new look after undergoing a multi-million dollar renovation. Our beloved Italian restaurant, known for its classic Italian fare and vibrant atmosphere, will soon reopen its doors with an upgraded dining experience, offering both traditional favorites and signature steakhouse selections in a revitalized setting.

As expected Carmine’s will maintain its spot as a go-to destination for Gold Coast diners while introducing a one-floor layout featuring indoor dining, a new private dining room, indoor and outdoor bars, and expansive terrace space. With a total seating capacity of 366, this modern space is designed to welcome guests for both everyday dining and milestone celebrations. Whether it’s an intimate weekday dinner or a lively celebration, the ambiance strikes the perfect balance between sophistication and comfort. One of the standout features of our new renovation is the elevated terrace bar overlooking the vibrant Rush Street—one of the few second-floor terraces in the area! This stylish open-air space features a sleek marble bar, high-top seating, and a modern pergola with warm overhead lighting. Elegant design elements and refined finishes enhance the sophisticated yet inviting atmosphere, making it the perfect spot for guests to enjoy a meal or cocktails while soaking in the energy of the Gold Coast from above.

“We’re beyond excited to return to the Gold Coast with a fresh new space that allows us to continue serving the flavors our guests love while offering an even more elevated experience,” said Alex Dana, owner of Rosebud Restaurants. “Carmine’s has always been a Gold Coast staple, and this renovation ensures we’ll remain a part of the neighborhood for years to come. For 50 years, the Rosebud family has been at the heart of our success, and as we continue to grow—including our expansion into Boca Raton with the opening of Mia Rosebud—we remain committed to delivering the same exceptional dining experience that has defined us since 1974.”

Chef Arturo, Head Chef at Carmine’s, shared his excitement about the upcoming reopening: “We can’t wait to welcome our guests back and serve them dishes made with love. From our signature stuffed mushrooms to the premium butcher-cut bone-in ribeye, every bite is crafted with care, and we’re eager for everyone to experience it in our beautiful new space.”

While the renovation is underway, Carmine’s loyal patrons can look forward to an unforgettable experience once the newly designed space opens to the public. Diners can still enjoy Rosebud classics at Rosebud on Rush or Rosebud Rosetta. To stay tuned , sign up for our newsletter!
