Introducing Bobby, the new Owner of Rosebud Lemont 🍝

If you’ve been around Rosebud long enough, chances are you already know Bobby—or at least recognize him as a familiar, welcoming face. Today, we’re proud to share that he is now the official owner of Rosebud Lemont.

His journey with Rosebud began in the early '80s, when Friday nights meant dinner at Taylor Street with a group of friends. What started as a tradition turned into a calling.

He met Mr. Dana when he was just 17 years old and began shadowing him daily, soaking up everything he could. “I would follow him without saying a word, just hoping to see what he sees—but you can’t, because he’s a restaurant savant,” Bobby says. “If I could be even a quarter of what he is, I knew I’d be great in this business.”

Over time, he naturally stepped into a leadership role—keeping an eye on the dining room, checking on quality at our locations, and always helping wherever needed. Bobby eventually bought his first restaurant, Nana’s, from Mr. Dana, but Rosebud has always felt like home.

To him, Rosebud isn’t just a restaurant—it’s a legacy. A place where friendships are forged, traditions are honored, and excellence is expected. He says, "to be part of this brand is like playing for the ’85 Bears."

Meet Our Rosebud Spotlight: Chef Davide! 🌹

Chef Davide began his journey with Rosebud nearly 8 years ago, stepping into the kitchen at @rosebud_rush as a young chef in training. Since then, he’s grown into a true leader, rising through the ranks as Executive Chef at Mama’s Boy and now serving as both Chef and Manager at @rosebud_deerfield.

For Davide, Rosebud is more than a restaurant group. It’s an iconic name in Chicagoland hospitality, a place that honors quality ingredients, and most importantly, a team that feels like family. From kitchen to front of house, he thrives in the collaborative energy and takes pride in bringing his Italian roots to every plate.
